A stereotype is a broad generalization about a group of people. They usually only offend or "stick" to groups when there is a shade of truth to the generalization.
I've heard a lot of gay men talking like valley girls, and some of them even (consciously or subconiously) take on a slight lisp when they're talking to their friends.
Talking and dressing in a flamboyant manner is a way for gay men to try and "shock" people in order to get attention and as a way of rebelling against society.
